IN THE UNITED STATES WE SAY CANNING TOMATOES. IN A SEARCH ENGINE ON THE INTERNET LOOK UP "BALL CANNING RECIPES". THE BALL COMPANY MAKES GLASS JARS AND METAL LIDS FOR PRESERVING FOOD. THEY ARE THE LEADING COMPANY IN THE UNITED STATES TO MAKE CANNING JARS. TOMATOES AND SOME FRUITS CAN BE PRESERVED BY THE HOT WATER BATH METHOD. THIS IS DIFFERENT FROM PRESSURE CANNING WHICH IS VERY EXPENSIVE EQUIPMENT. THE BOTTLING YOU ARE TALKING ABOUT IS CALLED THE OPEN KETTLE METHOD. RESEARCH DONE AT THE UNIVERSITY OF OKLAHOMA PROVES THAT OPEN KETTLE METHOD IS NOT AS GOOD AS HOT WATER BATH METHOD. FOOD PRESERVED BY THE HOT WATER BATH WILL KEEP FOR ONE YEAR TO 18 MONTHS. PINTS ARE ABOUT HALF A LITER AND QUARTS ARE A LITTLE LESS THAN ONE LITER. I HAVE A MASTER CANNERS CERTIFICATE FROM THE UNIVERSITY OF OKLAHOMA AND I TEACH FARM WOMEN HOW TO CAN FOOD.

Yep - you can do just that. Sugar is the preserving ingredient in jams etc like you said, but in tomatoes it's their own acidity. There's lots of information on bottling and all sorts of small farm stuff, as well as a friendly forum) over at www.seco.com.au.
