What's the Best Hot Climate Apple Variety?

We have a colour bond fence that receives full afternoon sun facing due west. Recent hot (40 deg) days in Perth have caused the grass infront of the fence to be scorched. I was wondering if it would be possible to espaliate an apple tree (or 2) against this fence with a view to:

- protecting the grass
- covering the fence
- producing some edible fruit
- making the back yard more attractive and cooling it down

We live in the suburb of Beeliar south of Fremantle and am wondering what variety of apple tree would be most successful in this environment please?
